My favorite meal of the week is brunch (as with many other people I’m sure!) and sometimes it makes me a little bummed that I have to wait until the weekend to get it… That was until Snooze came to town!

The Denver-favorite finally opened its doors in Boulder in the spring of 2012 right on Pearl St, and as been packed ever since! I wasn’t surprised to see it completely packed and a (well worth it) 10-minute wait on a Tuesday morning (I’m convinced nobody works in Boulder).

After ordering a phenomenal iced almond milk latte at the bar, we scored an awesome table on the patio with other mid-week brunchers.

My dad decided to go with his classic breakfast: Huevos Rancheros, eggs sunny side up!

Naturally, I took a few bites and was amazed! For being far from any Southwestern town, these bad boys were right on point with flavor! All the signature flavors, with just enough cheese to bring it all together. I do with the salsa was just a tad spicier, but I LOVE spicy!

Go ahead, get a good look and then go order some!

I decided to go with the more traditional, 3-egg scramble and added wild mushroom and arugula, sub gluten-free toast and a side of potatos.

Perfectly simple for a sunny Tuesday breakfast. Their jam and toast is perfection and I happily chatted away the morning. We oped out of the sweet side of breakfast this time, but their pancakes and French toast are well worth a visit themselves! They have wildly delicious pancakes like Pineapple Upside Down Cake and Red Velvet and their “OMG French toast literally made me say “OMG” the first time I had it!

I saw plenty of folks having meetings over their brunch and sharing ideas, so consider it for your next brunch meeting!

They have a full bar too that’s whipping up crazy good Bloody Mary’s so be sure to stop in on a Sunday Funday!
