Colorado green chile (also called chile verde) is a beloved regional staple. Made with roasted Hatch or Pueblo green chiles, tomatillos, onions, garlic, and earthy spices, it’s a Boulder tradition. Locals pour it over everything—from fries to fried eggs—but nothing beats its place in a breakfast burrito.

DIY Green Chile Breakfast Burrito Recipe

Ingredients (Serves 4)

For the Green Chile Sauce

  • 5–6 roasted Hatch or Pueblo green chiles (mild or medium heat)

  • 4 tomatillos, husked and chopped

  • 1 small onion, diced

  • 3 garlic cloves, minced

  • 2 tablespoons olive oil

  • 1 cup vegetable broth

  • ½ teaspoon cumin

  • ½ teaspoon oregano

  • Salt and pepper to taste

  • Optional: 1 tablespoon flour or cornstarch to thicken

For the Burritos

  • 6 eggs, scrambled (or tofu for a vegan version)

  • 1½ cups roasted potatoes or hash browns

  • 1 cup shredded cheddar or plant-based cheese

  • 4 large flour tortillas

  • Optional add-ins: avocado, black beans, sautéed spinach, veggie chorizo

Directions

  1. Make the Green Chile Sauce
    In a saucepan, heat olive oil. Sauté onion and garlic until soft. Add tomatillos and cook for about 5 minutes. Stir in green chiles, broth, cumin, and oregano. Simmer uncovered for 15 to 20 minutes. Blend with an immersion blender if you like a smoother texture. Thicken with flour or cornstarch if desired.

  2. Prepare the Filling
    Scramble the eggs (or tofu), roast the potatoes, and warm all other components.

  3. Build the Burrito
    Fill each tortilla with eggs, potatoes, cheese, and any additional fillings. Roll tightly.

  4. Smother and Serve
    Place burrito on a plate and pour green chile sauce generously over the top. Garnish with chopped scallions, a spoonful of sour cream, or fresh cilantro if desired.
