Tots Without the Tater
Rollin Greens food truck based out of Boulder, Colorado, is bringing something new to the freezer aisle. Healthier than a tater tot, Rollin Greens decided to make millet tots, a superfood based tot that is just as delicious as their unhealthy tater sibling.
Millet is a grain that is easily grown in Colorado. It requires very little water to grow, and is so sustainable that it has been around for more than 4,000 years. Millet is easily digestible and has a low rate of allergens, plus it’s packed with nutrients that potatoes do not have, including:
- Magnesium
- Calcium
- Maganese
- Tryptophan
- Phosphorus
- Fiber
- B vitamins
- Antioxidants
- Complete Protein
- Complex Carbohydrate
Millet tots were created by Rollin Greens as a way to have an organic, delicious food that kids and adults alike love. Millet tots started out of the Rollin Greens food truck back in 1980–the first organic food truck in Boulder! The Cunningham family has continued the line with the food truck and with their packaged products which launched in 2015.
