One of my favorite things to do on a Saturday morning is to pay a visit to the Boulder Farmers Market. I love sampling the wide variety of local honey, salsa, and delicious vegetables, but never would I think to stumble upon something so unique as Joey’s Handheld Pancakes.

Joey’s Pancakes are a lovely local business that boasts delicious homemade and “unordinary” pancakes made from fresh almond milk, greens, organic grains, coconut oil, and sweetened with fruit. They are pre-made and packaged with delight, available only at local Alfalfa’s grocery stores and the Boulder Farmer’s Market.

They are a great treat in for breakfast, as well as an afternoon snack! My personal favorite is the blueberry/carrot/kale pancake. (Don’t be fooled by the ingredients – I would dare to say these fresh and organic pancakes are even better than your average iHop!)
