As you probably already know, I am a huge fan of burgers (who isn’t?). For any fellow burger snob, this caprese burger from Boco Café is exactly what you are looking for. Yes, that’s right – a caprese burger. If you don’t know what caprese is, it is typically a type of salad or appetizer at an Italian restaurant consisting of basil or basil pesto, tomato and mozzarella. It is utterly simple and totally delicious. But who would have thought it would taste good on a burger? Well, Boco Café certainly did.

And just in case you were wondering, “Boco” stands for Boulder, Colorado. There’s one more little fact about Boulder for you. Make sure to run by Boco Café on the University Hill, near the corner of 13th and College Avenue.
