POSTing Up in Boulder
Have you guys tried the Post Brewing Company’s location in Boulder? I have! And, it’s now one of my favorite hangouts in town. Hot Chicken Loves Cold Beer, what more is needed to entice you?! The poultry and pilsners are calling your name!
I was lucky enough to heed that beckoning, and make the Grand Opening on Thursday, November 2nd. The place was bumping, filled with boisterous people ready for a brew. An unbelievable atmosphere with unbelievable employees. Lead brewmaster, Nick Tedeschi, and head chef, Brett Smith, make a mean duo. Their combo of pipin’ hot chicken and quality craft beer are the perfect ingredients for a Post pairing.
My personal Post pairing was a plate of chicken and waffles, smothered in chorizo country gravy, topped with pumpkin butter and chile-cherry chutney, all washed down with an Ol’ Zippy beer. Owner, Dave Query, let me in on a secret: Ol’ Zippy is a great breakfast brew, and he sure was right. Up until Thursday night, the Townie Ale was my favorite, but Query quickly swayed my opinion. I was sticking to Ol’ Zippy for the rest of the night, so our wonderful waitress, Carly, introduced me to the real Zippy. Oh yes, Zippy is real. He’s a taxidermy, chain-smoking, gun-slinging squirrel keeping watch above Post’s bar. A little guy that bops around Colorado, being shuffled from Post Breweries down in Denver all the way up to Longmont.
Ol’ Zippy’s shenanigans is just one example of how lively and welcoming Post’s staff, and owner, Dave Query are. Query created the Big Red F Restaurant Group in 1994, branching out into the beer industry with the Post Brewing Company in 2014. “It only made sense to start brewing our own beer, putting our taps behind the bars, innovating craft beers to go along with the food we are creating,” Query explained. I listened to the native Boulderite describe his inspirations, as he watched the beer culture develop as a young kid. It was only natural that he opened a new location in Boulder, and we sure are glad he did. I mean, craft beer, fried chicken, and taxidermy?! I was in love! And, will definitely be back many, many, many…many times. I will see you there!
